Johnny Appleseed Day Fun

I am very aware that Johnny Appleseed Day was yesterday, but, how much fun would it be to celebrate the event all! week! long!

Yeah, my 7-year-old didn’t buy it either, especially since I made the suggestion after forgetting to send apple treats to school yesterday.

There’s nothing fun about being labeled “That Mom.” The one who can’t remember to place pre-packaged applesauce into her only kid’s backpack.

The fun part comes in trying to make up for my mistake.

As my daughter shared tidbits about John Chapman (a.k.a. Johnny Appleseed) and the orchards he planted in Illinois, Indiana, Kentucky, Pennsylvania and Ohio, I was able to whip up the following quick and tasty apple dessert. Making the treat is a breeze, but the real fun is getting to eat it with mounds of whipped cream and vanilla ice cream.

EASY APPLE BREAD PUDDING

Ingredients:

4 cups day old white bread, cubed

3 Red Delicious apples, diced into cubes

1 tablespoon butter

2 teaspoons cinnamon

3 tablespoons melted butter

4 eggs

1/2 teaspoon nutmeg

1/2 teaspoon salt

1/2 cup sugar

3 cups milk

1 1/2 teaspoon vanilla

1/2 cup Kraft caramel squares

Directions:

Preheat oven to 350 degrees.

Arrange bread cubes in a 1 1/2 quart baking dish and drizzle melted butter over them.

In a medium pan, cook the diced apples with 1 teaspoon cinnamon and 1
tablespoon butter until softened (about 5 minutes).

In another bowl combine eggs, remaining cinnamon, nutmeg, and salt.

Stir slightly.

Dissolve sugar in the milk and slowly stir in the eggs and vanilla.

Pour mixture over the bread cubes and let soak for 2 to 3 minutes.

Add the apples and caramel squares over the bread and gently mix.

Bake for an hour.

Remove from oven, cut into pieces and top with whipped cream and/or vanilla ice cream.
