Kicked Up Christmas Brownies

When a cookie just doesn’t cut it and cake is a bit too much, there’s the brownie. But, with the holiday season upon us a plain chocolate brownie just won’t do. Take a look at these kicked up recipes for Shortbread Brownies and adorable Christmas Snowmen Brownies:

SHORTBREAD BROWNIES

Ingredients:

For the Crust:

1 cup butter or margarine

2 cups flour

1/2 cup sugar

For the Brownie:

1/3 cup water

1/3 cup vegetable oil

1 egg

1 package of your favorite brownie mix

Directions:

Preheat oven to 350 degrees.

Grease a 13-by-9-inch pan.

To make crust: Cut butter into flour and sugar until mixture resembles coarse crumbs. Gently and evenly pat into prepared pan. Bake 15 minutes; set aside.

To make brownies: Blend water, oil and egg in mixing bowl. Add brownie mix and stir until moistened. Spoon over crust and spread evenly. Bake according to package instructions.

Cool before cutting.

Makes 24 bars.

CHRISTMAS SNOWMEN BROWNIES

Ingredients:

3/4 cup Hershey’s Cocoa

1/2 teaspoon baking soda

2/3 cup butter, melted and divided

1/2 cup boiling water

2 cups sugar

2 eggs

1 teaspoon vanilla extract

1-1/2 cups all-purpose flour

1-2/3 cups Peanut Butter Chips

Powdered sugar

Directions:

Heat oven to 350 degrees.

Line 13 by 9-inch baking pan with foil; grease foil.

Stir together cocoa and baking soda in large bowl; stir in 1/3 cup melted butter. Add boiling water; stir until mixture thickens. Stir in sugar, eggs, vanilla and remaining 1/3-cup butter; stir until smooth. Add flour; stir until blended. Stir in peanut butter chips. Pour into pan.

Bake 35 to 40 minutes.

Cool completely in pan, then cover; refrigerate until firm.

Remove brownies from pan and cut into snowmen shapes with cookie cutters (or cut into squares). Just before serving, sprinkle with powdered sugar.

Makes 12 snowmen brownies.
