Left Over Beef Casserole

I fixed Roast Beef for dinner the other night. I like to buy the roasting bags, because I can basically put it in there and forget it until the timer dings. I had some beef left over, so I stuck it in the fridge hoping I would get creative tomorrow. No one likes just warmed up beef here, so I had to think of something. The next day, I fixed the recipe below and the family finished off the roast without any complaints. I hope it works for you.

You will need:

Roast- about two cups, diced

1 can of beef gravy

1 medium onion, diced

1 small green pepper

1 small bag of frozen peas and carrots

1 cup shredded Mild Cheddar cheese

seasoning, if desired. If you use the roasting bag and the seasoning, it may already be seasoned enough. You will just have to check it.

Preheat oven to 350 degrees. In a casserole dish, add your beef, gravy, onions, green peppers, peas and carrots. Top with cheese. Bake covered in oven for 30 minutes. Make sure to cover so that your beef will stay tender.

If you added vegetables to your beef roast on the first day, like potatoes, celery and onion, and you have some left over, you can add them with everything else.

Suggestions: If you didn’t have left over potatoes or you don’t add them, bake a potato to go along with this casserole. You can also add to this casserole with some biscuits, rolls or even cornbread.
You may want to fix a simple garden salad with lettuce, tomato, cheese, whatever you like. Add your own homemade dressing or store brand. It would be great.
If you don’t like cheddar cheese, you could change it to mozzarella or american cheese. It’s your preference.
