Lemon Cake
If you like lemon, you’ll love this recipe.
INGREDIENTS:
1 cup butter
1/2 cup shortening
2 cups sugar
3 large eggs
3 cups flour
1/2 tsp baking soda
1/2 tsp salt
1 cup buttermilk
2 tbs grated lemon rind
1/2 cup lemon juice
1 tbs lemon juice
3 cups confectioners’ sugar
DIRECTIONS:
1. Preheat oven to 325.
2. Beat 1/2 cup of butter, shortening and sugar until light and fluffy.
3. Add eggs one at a time.
4. Sift flour, baking soda and salt together and add alternately with buttermilk.
5. Stir in 1 tbs lemon juice.
6. Pour into a greased and floured tube pan, bake for 1 hour and 15 minutes or until cake tests done.
7. Mix remaining butter with confectioners’ sugar until creamy.
8. Add remaining lemon rind and enough lemon juice to give pouring consistency.
9. Pour over warm cake.
