Lemon Coleslaw
Tart and tangy.
INGREDIENTS:
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup fresh lemon juice
2 tbs dijon mustard
2 tbs olive oil
2 tbs sugar
1 tbs white wine vinegar
1 tbs prepared horseradish
1 tsp salt
1/2 tsp celery seeds
1/2 tsp pepper
8 cup shredded cabbage
1/2 medium red bell pepper
1/2 medium green bell pepper
1/4 medium red onion
1 medium carrot, shredded
2 tbs chopped fresh parsley
2 tsp grated lemon peel
DIRECTIONS:
1. Combine first 11 ingredients in bowl and whisk to blend. Refrigerate dressing until cold.
2. Combine cabbage, bell peppers, onion, carrot, parsley and lemon peel in large bowl.
3. Toss with enough dressing to season to taste and serve.
