Let’s get SAUCY!

Sauces make the meal, right? Here’s a savory recipe for Teriyaki sauce and two recipes for dessert sauces. Hope you enjoy them.

I love Teriyaki sauce. It’s delicious on chicken, beef, or salmon. I created this recipe tonight and am serving it to my family. It was easy to make, flavorful, and most of all, yummy! This recipe will make enough for approximately 4-6 servings of meat.

For My Teriyaki Sauce You’ll Need:

½ cup orange juice

½ cup soy sauce

½ cup hoisin sauce

¼-1/2 cup brown sugar

1 TB Balsamic Vinegar (can substitute Rice Wine Vinegar)

Pinch of salt

1-inch piece of ginger, peeled and roughly chopped (will remove later)

To Make the Sauce:

Combine all ingredients in a small saucepan. Whisk together and bring to a boil. Continue cooking, uncovered, over medium heat for approximately 15 minutes until sauce thickens. (Make sure you keep an eye on the sauce–if your pan is too small the sauce may boil out)

You can use this sauce to marinate meat or use it to baste meat while grilling or baking. If you marinate meat in the sauce, be sure to reserve a little (prior to marinating) to top the meat after it’s cooked.

Dessert Sauces:

What’s yummier on a hot summer day than a cold bowl of vanilla ice cream? I sure can’t think of anything…except maybe vanilla ice cream with chocolate sauce. Here are a few recipes for ice-cream toppings. They’re delicious and can also be used on pound cake or any other dessert.

Chocolate sauce

For this recipe you’ll need:

¾ cup unsweetened cocoa powder

1 ½ cups sugar

Pinch of salt

1-Cup water

½ tsp. instant coffee

1 tsp. pure vanilla extract

Put the chocolate into a heavy-bottomed pan. Add sugar, salt, water, and instant coffee. Bring to a boil and simmer for five minutes. Add 1 tsp. pure vanilla extract

Raspberry Sauce:

For this recipe you’ll need:

1 package frozen raspberries (do not drain)

½ cup sugar

1 tsp. cornstarch

Add all ingredients in a heavy-bottomed pan and cook for approximately 20 minutes, until raspberries have broken down and mixture is smooth. Can strain to remove seeds if desired.
