Low-Cal Sweet Potato Pie

Is your mouth hankering for some delicious sweet potato pie like Mama used to make? Do you want to eat it so bad that you can almost taste it? Do you resent having to be on this blasted diet because it seems like all of the things that taste really, really good are high in calories? Think again! You can have your pie and eat it too! Here is a recipe for sweet potato pie that is too die for.

Ingredients:

2-1/2 cups of sweet potatoes
¾ cup of skim milk
2 eggs
1-1/4 cups of no calorie sugar substitute
1-1/2 teaspoons of lemon juice
¾ tablespoon of flour
1-1/2 teaspoon of vanilla
¼ teaspoon of nutmeg
¼ teaspoon of cinnamon

Directions:

1. Cook and mash the sweet potatoes.
2. In a large bowl combine the sweet potatoes, the skim milk, the eggs, the sugar
substitute, the lemon juice, the flour, the vanilla, the nutmeg and cinnamon. With electric mixer blend until smooth consistency.
3. In a prepared pastry pan pour in the mixture.
4. Preheat the oven to 400 degrees Fahrenheit.
5. Bake for 35 to 45 minutes.
6. To test for completion of your pie insert a sharp knife. If clean, your pie is ready to
remove from the oven.
7. Cool completely and refrigerate until you are ready to serve the pie.

Serving Size: 10 Approximately 145 calories per serving.

This low-cal sweet potato pie is so incredibly scrumptious that your company will be begging for more. Bring this pie to your next dinner function and watch their faces as they enjoy the sweet taste of your sweet potato pie! This is one pie that you will not have to worry about eating!
