Low Fat Cake Mix Cookies!

The Ultimate Cake Mix Cookie Book by Camilla V. Saulsbury not only contains yummy recipes for holidays, bake sales and snacking but it also contains recipes that are healthy! Who does not love a healthy cookie? Until recently I never thought the two words could be used together. The author, Camilla V. Saulsbury may be the winner of The Food Network’s Ultimate Recipe Showdown Best Cookie Recipe, but she is also a fitness expert. Cookie and fitness are a remarkable combination. The entire book is not based on low fat or healthy recipes but it does contain about 13 cookie recipes that you can eat without the guilt. Here is one that is super delicious!

Healthy Chocolate-Pumpkin Cookies

Ingredients:

1 package devil’s food or chocolate cake mix

1 (15 ounce) can unsweetened pumpkin puree

Optional: Two thirds Cup miniature semisweet chocolate chips (Really, is this optional? I call it essential and if you want to add in a bit of health use dark chocolate chips.)

Directions:

Preheat oven to 350 degrees F.

Mix cake mix and pumpkin puree in a large bowl with a wooden spoon until well blended. The dough will be stiff.

Add in chocolate chips, if desired.

Bake 8 to 11 minutes or until the edges are firm and the center is just barely set when lightly touched.
Cool one minute on sheets, then remove with spatula and place on wire racks to cool completely.

Instead of using a chocolate cake mix you can use a spice or yellow cake mix. Consider adding in cranberries or raisins instead of the chocolate chips or with the chocolate chips!

I have a tip for you of my own. You can mix pumpkin puree with a desired cake mix and scoop into a bundt pan and back for 50 to 60 minutes for a delicious low fat cake.
