Low Fat Chocolate Banana Bread
Ingredients:
1 3/4 cups whole wheat pastry flour
1/4 cup unsweetened cocoa powder
3/4 tsp baking soda
1/4 tsp salt
1/2 cup firmly packed brown sugar
1 tbsp canola oil
1 large egg beaten
1/2 cup low-fat buttermilk
1 tsp vanilla
1 1/2 cups mashed bananas (about 2 medium)
1/3 cup mini chocolate chips (optional)
Preparation:
Preheat the oven to 350 degrees.
Whisk flour, cocoa powder, baking soda and salt in a large bowl. Combine sugar, oil, egg, buttermilk and vanilla in a medium bowl. Add wet ingredients to dry, and stir until just moist. Fold in mashed bananas, followed by chocolate chips if using. Empty batter into a 9 x 5 loaf pan coated with nonstick cooking spray.
Bake for 55 minutes to an hour.
