Low Fat Desserts

The New Year typically brings with it the resolution to drop a few pounds by eating healthier and working out more. Fortunately, there’s still a way to enjoy a sweet post-meal treat even if you have pledged to reduce your fat and calorie intake.

The following low-fat desserts are simple to make and don’t skimp on flavor:

LOW-FAT BANANA TRIFLE

Ingredients:

Angel food cake

1 box sugar-free vanilla instant pudding

2 containers Fat Free Cool Whip

4 ripe bananas

1/2 cup crushed Reduced Fat Nilla Wafers

2 1/2 cups Skim milk

Directions:

Cut cake in 1-inch squares.

Prepare pudding with milk, and fold in 1 cup of Cool Whip.

Slice bananas.

Layer as follows: Cake, pudding, wafers, and bananas, top with Cool Whip. Repeat.

Chill for at least 4 hours before serving.

Garnish with more Nilla Wafers before serving.

FRESH APPLE CRISP

Ingredients:

4 cups sliced apples (use your favorite apple—Red Delicious, Granny Smith, etc.)

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/4 cup water

Ingredients for Crumb Topping:

1/3 cup chilled unsalted butter

1 cup brown sugar

3/4 cup all purpose flour

Directions:

Preheat oven to 350 degrees.

Lightly spray an 8 by 8-inch baking dish with PAM.

Layer apples in the bottom of baking dish, and then sprinkle with cinnamon, salt and water.

Combine crumb topping ingredients with a pastry blender or a food processor until crumbly.

Sprinkle topping mixture over apples and bake for 40 minutes.

Serve warm with milk or low-fat vanilla ice cream or yogurt.

PLAIN POPCORN BALLS

Ingredients:

1 tablespoon oil

3/4 cup popcorn

1 10-oz. bag of mini marshmallows or 40 large
marshmallows

3 tablespoons butter

PAM spray for your hands

Directions:

Melt butter and marshmallows together. Mix with popped popcorn.

Spray PAM on your hands to form balls.

Place popcorn balls in waxed paper bag or twist in sheet of waxed paper. Let sit for a couple hours, and then serve.
