Christmas is on its way and so is Christmas fare. Tables everywhere will be adorned with candy canes, hot cocoa, traditional Christmas turkey, and all the fixings for an indulgent meal. This is also the time Egg Nog likes to make its appearance. Sadly if you drink too much it will make its appearance on your hips. That is not a very nice Christmas present or a fun way to start off the New Year.
Every year my son asks me to grab egg nog at the store. He loves it. In fact, we all enjoy it expect for my oldest daughter. She thinks the texture is like thick melted milkshake that doesn’t even taste as good as thick melted milkshake. I suppose the texture is like a yogurt drink. While, I find yogurt drinks displeasing I still enjoy egg nog. I love putting it in my coffee and I love buying all the fun flavors like gingerbread and pumpkin spice. What I do not love is the high fat content. That along keeps me from buying it. Upon mentioning this to a friend I was gifted with this recipe. So enjoy!
Low Fat Egg Nog
Ingredients:
3/4 cup sugar
1/4 tsp cinnamon
1/4 tsp freshly grated nutmeg
1 egg
4 egg whites
1 1/2 cups fat free milk
1 1/2 cups fat free half-and-half
1 1/2 tsp vanilla extract
freshly grated nutmeg to garnish
Preparation:
Combine sugar, cinnamon and nutmeg in a large bowl. Add egg and egg whites, and beat with a mixer for 3-4 minutes.
Gently heat fat free milk in a large saucepan. Gradually stir egg mixture into the hot milk. Heat, stirring constantly, until mixture is slightly thickened. Stir in vanilla extract and remove from heat.
Let the milk and egg mixture cool a little before blending with fat-free half-and-half milk. Cover and chill in the refrigerator. Before serving, add rum or brandy if desired and sprinkle with freshly grated nutmeg on top.
