Low Fat Picnic Food

It’s picnic weather! Families and friends will be planning out door gatherings and ultimately asking you to bring a dish. Here are a few low fat and delicious dishes that are picnic friendly to share. Always remember that most favorites can be made low fat or fat free by making simple substitutions. So, don’t discount some of your favorite foods too quickly. Be creative and think low fat!

Low Fat Egg Salad

Ingredients

*6 large hard-boiled egg whites (yolks discarded)

*2 large hard-boiled eggs (yolks included)

*1/2 cup celery, chopped

*1/3 cup green onion, chopped

*1/3 cup red bell pepper, chopped

*2 tablespoons light mayonnaise

*2 tablespoons fat free sour cream

*1 teaspoon dijon-style mustard

*salt

*pepper

Directions

Peel hard boiled eggs and discard 6 yolks.

In a medium size bowl, add the 6 egg whites and 2 whole; chop.3

Add the celery, green onions, bell pepper, mayonnaise, sour cream, Dijon mustard, salt and pepper; stir until well mixed.

Stuffed Pita Pocket

* Thinly sliced low salt deli turkey breast or low salt ham

* Whole wheat pita bread

* Red onion

* Tomato

* Cucumber

* Lettuce shredded

* Low calorie salad dressing of your choice

Fill your pita with all ingredients, remembering to thinly slice all vegetables and add a small amount of your favorite dressing for a real picnic treat.

Cesar Salad with Grilled Chicken

* 1 head Romaine lettuce – cut into pieces

* croutons

* 3 hard boiled eggs peeled and cut into quarters

* 2 grilled chicken breasts – cooked and thinly sliced

* Low fat shredded mozzarella cheese to sprinkle on top of the salad

* 1 bottle of your favorite low calorie Cesar salad dressing

This recipe is fantastic because you can use leftover chicken or make the chicken in advance. You can also assemble your salad before you leave so it is all done and ready to go or if you prefer it is simple enough to assemble there.
