Low Fat Pumpkin Recipes

It is October and that means pumpkin season. I love this time of year. The leaves are changing colors and pumpkins are ripe for the picking. I always look forward to pumpkin spice lattes, pumpkin muffins, and pumpkin rolls. Most of these tempting treats are high in fat and low in nutrition. I suppose that makes them more of a trick than a treat. Pumpkins are naturally low in fat and healthy for you. So, it should be one indulgence of the season we welcome. I recently heard on the radio that pumpkin spice coffee is so popular that cafes are quickly running out of it. Why spend the money and consume the calories when you can make it in the comfort of your own home?

Here is a fantastic recipe for pumpkin cookies that is low in fat and healthy. Pair it with the skinny pumpkin latte for a pumpkin spice morning.

Low Fat Pumpkin Cookies

1 cup canned pumpkin

1 cup brown sugar

1/3 cup applesauce

3 cups oatmeal

1 1/2 cups flour

1 tsp baking soda

1/2 tsp nutmeg

1/2 tsp ginger

1/2 tsp cinnamon

1/2 tsp ground cloves

Preparation:

Pre-heat oven to 350 degrees.

Mix together the pumpkin, sugar and applesauce.

In a separate bowl, combine the remaining ingredients, then add to the pumpkin, mixing well.

Drop by spoonfuls onto a baking sheet. Bake for 13-15 minutes or until done.

Skinny Pumpkin Latte

2 cups skim-milk

2 tablespoons canned pumpkin

2 tablespoons sugar

2 tablespoons vanilla extract

1/2 teaspoon pumpkin pie spice

1 cup of strong brewed coffee

Preparation;

In a saucepan combine milk, pumpkin and sugar. Cook on medium heat, stirring, until steaming. Remove from heat and stir in vanilla and pumpkin spice then whisk.
