Ice Box cookies are great for class parties, gifts to neighbors or even to brighten up a holiday dessert buffet. These are particularly easy because you roll them into a log and then slice them (as opposed to the kind that you might roll out and use a cookie cutter for). What I like about these cookies is that they are great for kids to help make. If you pick up some cookie decorations or colored sugar, you can easily make these with your preschooler. But I must confess that even my 8 year old enjoys whipping up a bunch of these cookies.
You will need:
1 cup all-purpose flour
1/4 tsp baking soda
1/8 tsp salt
1/4 cup butter, softened
2/3 cup sugar
1 egg white
1 tsp vanilla
Directions:
Combine flour, baking soda and salt in a small bowl. (Tip: If you pre-measure the ingredients, your little one can just pour everything in.)
In a large bowl, cream the butter and sugar. Add egg white and vanilla and beat until well combined. (Tip: An old-fashioned egg beater works well for this and lessens the opportunity for little fingers to get stuck.)
Gradually stir in flour mixture with a wooden spoon or spatula. Gather dough in a ball and on a piece of wax paper form the dough into a 6-inch log. Wrap and place in the freezer for 3 hours.
When ready to bake cookies, preheat oven to 350 degrees. Line a large cookie sheet with parchment paper to make clean up easier. Remove cookie dough from freezer and slice into 1/4-inch rounds. (Tip: If you use a plastic knife, your preschooler can do this step too with your help.)
Sprinkle with colored sugars or decorate with other decorations.
Place 1-inch apart on cookie sheet.
Bake for 8-10 minutes until lightly golden.
