If you are looking for a chip and dip combo to serve company instead of potato chips and onion dip, or even if you just have a craving for crunchy tortilla chips, you will want to try these recipes. Your friends and family will be impressed with your talents at making homemade, tasty chips, salsa, and dip.
Tortilla chips are really quite simple. Purchase a large 36 count package of corn tortillas. Heat some oil and fry each tortilla until crisp (or bake them on an oiled cookie sheet for less fat). Salt lightly if desired and allow to cool slightly. Cut each tortilla into eight pieces (like cutting a pizza). Serve warm with the simple salsa or bean dip recipes below.
Simple Salsa
Ingredients:
- 1 can tomatoes and chilies (Rotel or the equivalent store brand)
- 1 can stewed tomatoes, drained
- 1 small onion, chopped
- Jalapenos (optional… add to taste)
Directions:
Throw everything in the blender. Set the blender to the “chop” setting. Continue blending until stewed tomatoes are cut into small pieces. Chill for one hour before serving.
*Double recipe as necessary.
Bean Dip
Ingredients:
- ½ can of refried beans
- ½ cup of salsa (use some of the salsa you made)
- 2 ounces of Velveeta or similar cheese product (or 6 slices of American cheese)
Directions:
Combine ingredients in a microwave safe bowl. Microwave on high for about 30 seconds. Stir thoroughly and nuke again for 30 seconds. Stir. Continue this process until cheese is completely melted.
*Have a regular fiesta and whip up a batch of non-alcoholic Margaritas to go with these tasty treats! Prepare one can of frozen concentrate limeade, and one can of frozen lemonade according to package directions. Mix in one, two-liter bottle of lemon lime soda. Serve over ice or flash blend. Add powdered sugar to taste if you like your Margaritas more sweet than sour. Garnish with thin slices of lemon or lime if desired.
