Make Your Own Chocolate Treats for Love Day

Valentine’s Day is almost here and if you haven’t been to the store to pick out that special something for your sweetie, you might want to reconsider. I just got back from the mall, and frankly, I wouldn’t go back if you paid me money.

I say spare yourself the drama and headache of battling pre-Valentine’s Day crowds and head to the kitchen to whip up these simple, sweet homemade treats:

CHOCOLATE MOCHA CAKE

Ingredients:

12 ounces semi-sweet chocolate chips

1/2 cup butter

1/4 cup sugar

1/4 cup strong freshly brewed coffee

1 teaspoon vanilla extract and 2 tablespoons water

3 eggs

Cocoa powder for dusting

Directions:

Heat oven to 425 degrees.

Butter 8-inch spring form pan, then dust with cocoa powder.

Combine chocolate, butter and sugar in a double boiler. Carefully heat to melt. Add coffee, vanilla extract and water. Whisk in eggs until very well blended.

Spoon mixture into prepared pan.

Bake 13 to 20 minutes. Cake will not completely set in middle. Sides should pull away slightly from pan.
Cool to room temperature, then refrigerate until cold.

Dust with additional cocoa powder before serving.

DOUBLE CHOCOLATE COOKIES BARS

Ingredients:

8 ounces butter, unsalted and softened

3/4 cup sugar

1 cup brown sugar

1 1/2 cups flour

3/4 cup cocoa powder

1 teaspoon salt

1 1/2 teaspoons baking powder

2 eggs

1 tablespoon vanilla extract

2 cups dark chocolate chips

Directions:

Preheat oven to 375 degrees.

Cream together butter and sugars until fluffy. Add eggs, one at a time. Then, add the vanilla extract.
Slowly add dry ingredients to mixture starting with salt, baking powder, flour, cocoa and then chocolate chips.

Press into a greased 8 by 8-inch pan.

Bake for 25 to 30 minutes.

Cool and cut into bars.

Too make this treat extra sweet dust the cookie bars with powdered sugar before serving.
