When I stop at a convenience store, I usually end up buying more than gas for my van. I have to try and remember everyone’s order. One thing that my kids will always ask for over a candy bar is granola bars. There are so many different kinds available. You can get chocolate chip, honey and nuts, raisins, just to name a few. These kinds of snacks can be eaten for breakfast (although I don’t let the kids have the chocolate ones for breakfast), lunch or dinner. I keep them in the diaper bags, my pocket books, and even in book bags. Since my family likes them so well, I have found a recipe that is delicious and my kids get to choose what kind of granola bar they want. If your kids like granola bars, this is a good way to give them what they want and they get to help make it too.
You will need:
4 cups oatmeal
1/2 teaspoon salt
1 Cup brown sugar
1/2 Cup honey
1 stick butter
1 teaspoon vanilla
1 and 1/2 Cups nuts, if desired
Preheat oven to 350 degrees.
Mix together oatmeal, salt, brown sugar in one bowl, set aside. In another bowl, mix honey, butter, vanilla, and nuts. Then combine the two mixtures. Pour into a greased square casserole dish. Bake for 15 minutes. Let cool then cut into squares.
Suggestions: You can add marshmallows, any kind of nuts that you like, chocolate baking chips or caramels, coconut, chocolate,etc. Anything that your child likes in their granola bars. If your child likes the chocolate coating, just melt your chocolate then pour over the mixture in the dish. Then bake. Enjoy.
