Margarita Cheesecake

Margarita Cheesecake
Perfect for a southwestern themed get together!

INGREDIENTS:
Crust:
1 1/4 cups graham cracker crumbs
1/4 cup butter, melted
24 oz cream cheese, softened
1 1/4 cups sour cream
1 cup sugar
2 1/2 tbs Triple Sec
2 1/2 tbs Tequila
2 1/2 tbs fresh lime juice
4 large eggs
3/4 cup sour cream
1 tbs fresh lime juice
1 tbs sugar

DIRECTIONS:
1. Position rack in center of oven and preheat to 350 degrees.
2. Spray a 9-inch springform pan lightly with vegetable oil spray. Crush graham cracker crumbs in food processor. 3. Mix graham cracker crumbs and butter in medium bowl until well blended.
4. Press crumbs over bottom and 1 inch up sides of prepared pan. Refrigerate crust.
5. Using electric mixer, beat cheese in a large bowl until fluffy.
6. Beat in 1 1/4 cups sour cream, then 1 cup sugar, Triple Sec, Tequila, and 2 1/2 tbs lime juice. Beat in the eggs.
7. Pour filling into the crust.
8. Bake until outside 2 inches are set and center moves only slightly when pan is shaken, about 50 minutes. 9. Remove from oven and turn off oven in preparation for next step.
10. Whisk remaining sour cream, lime juice and sugar in a small bowl to blend.
11. Spread evenly over cheesecake. Return cheesecake to hot oven. Let stand 45 minutes.
12. Refrigerate cake until well chilled, up to 1 day. Run knife around pan sides. Remove pan sides.
13. Place cake on platter. Arrange lime half-slices and peel around top edge of cheesecake.
