Meal Planning and Freezer Cooking

Well, it looks like this week I’ll be concentrating my freezer cooking on breakfast staples again. Having breakfast in the freezer has really been working out for my husband lately, and it as shaved a bit off of our daily expenses.

I was planning on preparing a bunch of split chicken breasts in different marinades and freezing them for the upcoming months of outdoor grilling, but unfortunately, my grocery store was all sold out of the chicken. I’m not surprised, it was an amazing deal. I did get a rain check for the maximum limit and will pick up the chicken on my next shopping trip.

Instead, I spotted more English muffins on discount. Strangely, one package was marked $.79 and the other was $1.49. I got customer service to ring them both up for $.79 each. These will be turned into breakfast egg and cheese sandwiches.

Taking stock of the pantry, I found a box of Fiber One cereal that needed to be used up, so I made a double batch of raisin bran muffins with the intention of freezing them, Instead, my family have been plowing through them for breakfast and snacks, so I’ll have to make another double batch this week.

My husband really wanted more buttermilk waffles in the freezer, so I made a double batch of them this morning. Unfortunately, there were only three left to freeze, but they are pretty big. Can you tell we eat a lot in this family?

I also picked up more of the discounted Texas Toast to make into French toast for the freezer.

I think my family is getting tired of chicken for dinner (we served some of it with free yellow rice I got this week, homemade gravy and leftover broccoli), so I put the leftovers aside for today and will be making some crock pot macaroni & cheese (there is a bit of Velveeta to use up from a previous sale). I’ll also stir in some leftover ham from the freezer to make the dish even tastier.

Our grocery bill last week was $59 plus an extra $3.50 for the newspaper, buttermilk and discounted bread.
