Actually the title of this post is a little deceiving. It actually should read something along the lines Ham yesterday and Chicken today.
As I wrote in previous posts, I am making a concerted effort to cut those coupons and match up those sales items, freezer cooking and meal planning to reduce our grocery budget. So far, it has been so good. We have gone from a food expense of about $150 a week to one of about $60 a week, which is more than half off. Plus, during this time we have actually cut down on eating out and have been feeding an extra child for much of the time.
So we are doing well. The previous month we were in ham nation. We ate plenty of ham and froze a bunch of it as well. Now these past two weeks we have been in the country of chicken, so to speak. Roasters were cheap, boneless and skinless chicken was cheap, and now I see that coming up this week for sales, split chicken breasts are cheap.
So, as you can image, I am making some chicken stock this morning, which will be turned into chicken noodle soup for tonight’s dinner, paired with other goodies from the pantry, such as the practically free Pillsbury biscuits that we got in recent sales.
I also have to use up or freeze some cooked chicken from earlier in the week, before I tackle yet another roaster (fortunately, you can freeze the roasters whole, too). I have some refrigerated pie crust hanging around and aging as we speak, so I think a pot pie for the freezer might just be in order.
Red grapes are in season, so everyone has been munching on them. They are so juicy and good, a real treat. But I do need to address some aging apples in the fridge, and will probably turn them into a crock pot apple crisp for desert.
