Memorial Day Bash

Getting ready to celebrate Memorial Day with a big bash? Here are a few simple recipes that might help get the party started. I have included some salty and sweet treats, and even one which is both. Enjoy!

Crab Dip

  • 2 cups mozzarella cheese
  • 2 cups sharp cheddar
  • 1 cup mayonnaise
  • 2 cup imitation crab
  • 3 scallions
  • 1 French loaf

1. Preheat oven to 350.

2. Mix all ingredients except bread.

3. Cut top off bread and set top aside. Fill loaf with dip.

4. Top the loaf and bake at 350 for 45 minutes.

Note: For a little spice, add some fresh chopped jalapeños.

Super Party Dip

  • 2 8-oz blocks cream cheese
  • 1 pint sour cream
  • 1 pkg dry taco seasoning
  • 4 tbsp taco sauce (mild, medium or hot – whatever your preference)
  • 1 8-oz pkg shredded cheddar cheese
  • 1 8-oz pkg shredded Monterey jack cheese
  • 1 pkg shredded lettuce
  • 1 can sliced black olives
  • 1 bunch scallions
  • 1 medium sweet onion, chopped
  • 1 large tomato, chopped

1. Leave cream cheese at room temperature until soft.

2. Combine cream cheese and sour cream with dry taco seasoning. Mix until fluffy.

3. Add taco sauce and continue to mix.

4. Spread mixture on large serving plate. Layer lettuce, cheese, then vegetables.

Mom’s Pretzel Salad

  • 2 cups crushed pretzels (usually the sticks are easier to crush)
  • ¾ cup melted margarine
  • 3 tbsp sugar for crust
  • 1 cup sugar for cream mixture
  • 1 8 oz block cream cheese
  • 1 8-9 oz container whipped topping
  • 1 6 oz pkg strawberry gelatin
  • 1 12 oz pkg frozen strawberries
  • 1 ¾ cup boiling water

1. Preheat oven to 400.

2. Mix pretzels, margarine and 3 tbsp sugar. Press into 11 x 9 baking dish. Bake at 400 for 8 min.

3. Let crust cool.

4. Beat cream cheese and cup of sugar. Fold in whipped topping and mix. Put into crust and freeze 1 hour.

5. Make gelatin with 1 ¾ cup boiling water. Add strawberries and pour on top of cream mixture – slowly, as not to break through cream.

6. Chill until firm.

Caramel Dip

  • 1 8 oz block cream cheese
  • 1 18 oz (or 16 oz) container ready-made caramel dip
  • Crushed toffee pieces
  • Apples (as many as you think you might need)

1. Spread cream cheese evenly onto a round serving pan or plate (metal is easiest).

2. Pour caramel dip over cream cheese and distribute evenly.

3. Sprinkle toffee pieces over the caramel dip.

4. Slice apples and serve!
