Christmas morning is not the time to be serving cold cereal and dry toast for breakfast. The special day deserves an extra special morning meal. However, it shouldn’t require you spending hours in the kitchen while the rest of the family enjoys playtime with their new gifts. So, what do you do?
Consider whipping up the following simple, yet festively sweet breakfast recipes:
ORANGE AND CRANBERRY CREME BRULEE FRENCH TOAST
Ingredients:
2 tablespoons corn syrup
1/2 cup butter (1 stick)
3/4 cup brown sugar, packed
1 loaf Texas Toast
5 eggs
1 1/2 cups half and half
1 teaspoon vanilla
1 tablespoon frozen orange juice concentrate
1/4 teaspoons salt
1/2 cup dried cranberries
1 tablespoon fresh orange zest
Powdered sugar
Directions:
In a small saucepan, combine syrup, butter and brown sugar, simmer until syrupy.
Pour mixture into a greased 9 by 13-inch baking pan.
Slice the loaf into 1 1/2-inch thick slices, and place on top of the syrup in the baking pan.
In a large bowl, whisk together the eggs, cream, vanilla, orange juice concentrate and salt. Stir in dried cranberries and orange zest.
Pour mixture evenly over the bread.
Cover and refrigerate overnight.
In the morning preheat oven to 350 degrees.
Leave the French toast at room temperature while the oven preheats.
Bake uncovered for 45 minutes.
Remove from oven and cut into squares. Sprinkle with powdered sugar, and then add slices of fresh oranges and fresh or dried cranberries on top before serving.
STRAWBERRY CREAM CHEESE FRENCH TOAST
Ingredients:
8 ounces cream cheese
1/4 cup strawberry jam
12 slices of cinnamon bread
6 eggs
1 1/2 cups milk
Directions:
Blend cream cheese and jam together in a bowl.
Spread mixture on bread slices to make six sandwiches.
Beat eggs and add milk. Soak sandwiches in egg mixture.
Place bread in heated pan to cook.
Warm up jam and pour over finished toast.
Sprinkle with powdered sugar and fresh strawberries before serving.
