Have you heard of Mexican Corn Bread? Until I had this dish I did not know what Mexican Corn Bread was. The title makes it sound like a simple corn bread, but it’s actually a hearty casserole made mostly from ground meat, cheese, corn and corn meal. If you think this description sounds like a meal you’d like to attempt, read on for what you’ll need to make it and the directions to follow:
Ingredients:
- 1 cup corn meal
- 1/4 tsp baking soda
- 1 cup milk
- 2 eggs
- 2 cans cream style corn
- 1/2 tsp Tony Chachere’s Original Creole Seasoning (or other regular seasonings)
- 1 tsp chili powder
- 1/2 chopped onion
- 1 pound ground meat
- 1 tsp cumin
- Another 1/2 tsp Tony Chachere’s (or other seasonings)
- 6 slices of Cheddar or American cheese
Directions:
- Spray 13″x9″ baking dish (or 2 smaller baking dishes) with cooking spray.
- Chop onion.
- Brown onion and mean over medium heat, then season.
- Set oven to 350 degrees F.
- Combine all ingredients, except the meat (with onion) and cheese.
- Pour half of liquid mixture into dish.
- Crumble meat mixture over liquid.
- Place cheese on top of meat, to cover.
- Pour the remainder of liquid mixture over cheese.
- Bake for 45 minutes.
- Let dish set for 10 minutes before serving.
My mom passed this recipe on to me when I was a college student, so it’s become a shared family recipe that I plan to pass on to my daughter when she’s that age.
Mexican Corn Bread would be another great meal to bring a family who has a new baby or maybe needs some cheering up. Bring it with a bagged salad kit and maybe some freshly baked cookies for a complete meal.
