When I mention meatloaf for dinner to my family, there is no excitement. I have always used the same old recipe: Hamburger, egg, onion, tomato juice, bread crumbs, salt and pepper… Meatloaf is a traditional main course that used to be part of a weekly menu. Some families even had certain days of the week to expect Meatloaf for dinner, like Meatloaf Tuesday. Someone once described Meatloaf ingredients as being left overs just mixed together. How ever you fix meatloaf, it seems to wear out its welcome quickly. So how do we change it? My family loves Mexican foods. So how could I combine what they like with what I’m making? Mexican Style Meatloaf Roll. It gives your family a variety of taste rolled up in one. There are so many side dishes that could be added to this recipe to make it a wonderful meal. This recipe is easy and because it’s not really “Meatloaf” maybe your family will try it.
Here is what you need:
2 eggs, beaten
1/4 Cup Quick cooking Oats
1 Tablespoon Worcestershire sauce
1 teaspoon ground pepper
2 pounds ground beef
8 ounces cream cheese, softened
4 ounce can chopped green chilies, drained
3/4 Cup salsa
What you need to do:
Preheat oven to 350 degrees
In a large mixing bowl, mix together eggs and oats, Worcestershire sauce and pepper. Add ground beef and mix it well. On wax paper, press the meat mixture out into a rectangle. Combine cream cheese and chilies. Spread over the meat mixture, leaving about a one inch edge. Then roll the meat mixture, like you would a jelly roll, starting at the narrow end. Place the seam side down in a baking dish. Bake for 45 minutes. Drain fat. Top with salsa and bake 15 more minutes. Let stand for 10 minutes to set then serve.
