Migas

Migas
Migas is an egg-based dish, sort of a Mexican omelette, that is great for any meal but especially popular for breakfast.

INGREDIENTS:
6 large eggs, beaten
1 pinch salt and pepper
1 medium ripe tomato, diced
1/2 medium white onion, chopped
1 medium serrano pepper, diced
1 tsp fresh chopped cilantro
3 each corn tortillas, cut into 1-inch squares
1 cup grated Montery Jack cheese
2 tbs oil or butter

DIRECTIONS:
1. Heat oil in saute pan over medium-high. Add tortilla strips, cooking 2-3 minutes. Remove.
2. Add eggs to pan and scramble, cooking until fluffy but not quite done.
3. Stir in onion, serrano, tomato and cilantro.
4. Cook about 1 minute more, until eggs are fully done and added ingredients are warmed through.
5. Turn off heat and add grated cheese. Stir lightly, and top with more cheese.

Prep: 5 minutes
Cook: 15 minutes
Serves: 2
