If you’re a chocolate lover, you’ll likely agree with me when I say that brownies are delicious, no matter what you do or don’t add to them. Some of my favorite additions include chocolate chips, caramel, peanut butter, and walnuts. But that isn’t to say I’m not also a fan of traditional, no-frills brownies. They’re all delicious in my book.
I came across this recipe today and am thrilled to share it with you.
For this recipe you will need:
1 ounce semisweet chocolate
1/4 cup butter or margarine
1 cup sifted powdered sugar
2 tablespoons creme de menthe
1/2 cup sifted powdered sugar
1/2 cup butter or margarine
2 ounces unsweetened chocolate
1 cup granulated sugar
2 eggs
1/4 teaspoon mint extract
2/3 cup all-purpose flour
To make this recipe:
Preheat oven to 350 degree F.
Grease a 9x9x2-inch baking pan and set aside.
Combine the butter and chocolate in a medium saucepan. Melt butter and chocolate over low heat, stirring often.
Add the sugar, eggs, and mint extract. Using a wooden spoon, beat the mixture lightly by hand just until combined. Stir in the flour.
Spread batter in prepared pan.
Bake the brownies for 20 minutes. Transfer the pan to a wire rack to cool.
While the brownies are cooling, make the frosting–In a medium mixing bowl beat the 1/4 cup butter or margarine until fluffy. Slowly add the 1 cup sifted powdered sugar. Beat in creme de menthe. Slowly beat in about 1/2 cup sifted powdered sugar until the frosting is easy to spread.
Spread the frosting on the cooled brownies. In a small, heavy saucepan melt semisweet chocolate over low heat. Drizzle the chocolate on the brownies. Let the chocolate set, then cut into bars. Makes 16 bars.
