More Delicious Party Dips: Fiesta Dip and Cheesy Gorgonzola Dip

If you are struggling to find the perfect dish to take to an office party, potluck or family get together you’re in luck. For the past week I have been scouring my recipe boxes in search of the perfect contributions to the huge bash my friends are hosting on Sunday in honor of the Green Bay Packers making it to the NFC Championship game. In two days the Green and Gold will slaughter the New York Giants while we gorge on Spicy Sloppy Joes, Crunchy Cole Slaw, Crab Dip, and dozens of other tasty dishes. When the party is over I will then have two weeks to hunt down recipes for our Super Bowl shindig.

Whether you are hosting a football fiesta this weekend or plan to wait until Super Bowl Sunday, the following recipes will surely be a hit at your gathering. Both are simple and affordable dips, which blend familiar flavors with a little added zing.

The first is a Mexican bean dip that has been modified to reduce the fat and calories—-but not the taste. By using more natural ingredients instead of using nonfat versions of high-fat ingredients you get a guilt-free dip with loads of flavor.

The second is a rich and cheesy dip that goes perfectly with chunks of French bread.

FIESTA BEAN DIP

Ingredients:

1 16-ounce can Rosarita No Fat Traditional Refried Beans

1 teaspoon taco seasoning mix

1 tablespoon light sour cream

1 cup light sour cream

1 cup Pace Chunky Salsa (medium)

1/2 cup sharp shredded Cheddar cheese

1/4 cup finely diced green pepper

1/2 cup diced tomato

1/2 cup sliced black olives

2 tablespoons minced green onion

Directions:

In an 8-by-8-inch dish, blend together refried beans, taco seasoning mix and 1 tablespoon light sour cream. Spread mixture to evenly cover bottom of dish.

Spread 1 cup light sour cream over bean mixture. Carefully spread salsa over sour cream layer.

Layer remaining ingredients, in order listed above.

Refrigerate until ready to use.

Serve with tortilla chips, pita bread, or raw vegetables.

CHEESY GORGONZOLA DIP

Ingredients:

6.4 ounces Gorgonzola cheese, crumbled

1/2 ounce chopped garlic

0.2 ounce minced anchovy paste

1/2 tablespoon chopped basil leaf

Sprinkle of chopped parsley

1.6 ounces olive oil

Directions:

Combine all ingredients except oil in a large mixing bowl. Slowly add the oil and mix until well incorporated.

Serve with chunks of French bread.
