After my article yesterday, Freezer Cooking Breakfast Recipes, I decided to add some more. All of these have been tested though I will admit to sometimes altering them a bit to make them more suitable for my kiddo’s. We have a few picky eaters.
Regardless you should be able to make them and freeze them and then reheat them by following the directions. I love a simple breakfast and when it’s hearty and delicious at the same time, that’s all the better!
Texas Scramble
1/2 cup new red potatoes, cooked & cubed
1 tablespoon butter
1/8 teaspoon garlic powder
1 green onion, sliced
1/4 lb. sausage (pork, venison or Chorizo), browned & drained well
1/4 lb. Canadian Bacon or regular bacon
1/2 each red & green bell peppers, diced
3 eggs, beaten
Black pepper to taste
Dash of Spanish paprika
1/2 cup Cheddar cheese, shredded
1/2 cup Monterey Jack cheese, shredded
1/4 cup milk
In a non-stick skillet, place butter, garlic powder and cooked potatoes over medium heat for 1 to 2 minutes. In a separate bowl, add black pepper, paprika and milk to beaten eggs and pour mixture over the potatoes. Scramble eggs, constantly lifting with fork to keep eggs fluffy and to ensure even cooking throughout. Top with sausage, ham, green onion slices, bell pepper and cheese. Cover and cook about 1 to 2 minutes to allow cheese to melt. Serve over flour tortilla in warm plate and add salsa to side. These can be frozen after coking. You can wrap them up in a flour tortilla and wrap in wax paper and freeze. Microwave about 2 minutes or until hot.
Simple Breakfast Casserole
10 eggs (egg beaters do fine)
2 1/2 cups of milk
1/4 cup of chopped onion
1/2 cup Velveeta cheese
1/2 cup shredded sharp cheese
3 slices bread buttered and cubed
1 cup sausage (milk)
1/4 cup green pepper chopped
Brown the sausage with onion and pepper. Drain sausage mixture on paper towel. Blend eggs and milk. Butter a 9″x13″ baking pan. Put bread cubes in bottom of the baking pan. Spread cheese over bread. Then sprinkle sausage mixture over all. Refrigerate over night covered. Preheat oven 350. Bake for 45 min-1 hour or until set. This will serve around 8 adults. Other ingredients can be used or meat can be omitted or other meats substituted. To freeze, cut into squares and store in individual bags. To serve, if frozen, microwave for about 3-5 minutes, rotating every minute. If thawed, microwave approximate 1 minute 15 seconds.
