More Fun With Apples

Have a ball with apples this fall by getting the whole family involved in these fun and tasty projects:

APPLE JIGGLERS

Ingredients:

1 package (3 oz.) gelatin, any flavor

1 cup boiling water

1/2 cup cold water

Red Delicious Apples

Directions:

Dissolve gelatin in boiling water; stir in cold water and set aside.

Core apples leaving bottom of apple intact.

Hollow out some of the apple flesh to make room for gelatin.

Pour gelatin in apple and place apples in individual bowls to keep them upright.

Chill in refrigerator until gelatin is firm.

Cut in wedges to serve.

PINK APPLESAUCE

Ingredients:

10 Apples (any kind) peeled and cored

1 cups sugar

1/4 cup Red Hots candy

Directions:

Turn on crock pot while you peel and core apples.

Add the apple slices to the hot crock pot.

Once the apples are soft mash them and add the sugar and candies.

Stir.

Cook on high for about three hours, stirring occasionally.

Makes about five cups.

APPLESAUCE CAKE CONES

Prepare spice cake mix according to package directions, except substitute applesauce for the water.

Pour batter into flat-bottomed ice cream cones, about halfway.

Arrange 6 cones in a circle in microwave and cook on full power for 3 minutes. Continue baking 6 cones at a time until all batter is used.

When ready to serve, top each cupcake with a big scoop of ice cream.

CIDERSICLES

Fill small paper cups with apple cider and freeze partially.

Remove from freezer and insert a Popsicle stick in each and freeze until firm.

Peel away paper cup and enjoy a refreshing apple snack.

APPLE LEATHER

Peel and slice a variety of apples, such as Red, Delicious, Gala or Golden Delicious. Place apples in blender with 1 tablespoon lemon juice for each 4 cups of fruit.

Puree until smooth.

Add sugar or honey to taste.

Cover an inverted baking sheet with heat resistant plastic wrap like Saran Wrap.

Tape plastic to baking sheet with masking tape.

Pour apple puree over baking sheet in a very thin layer, leaving one inch free of puree around edges.

Bake in oven set at 140 degrees with door open about 2 inches until the apple mixture becomes leathery but not sticky. This takes about three hours.

Roll up apple leather and store in an airtight container.

For longer storage, refrigerate or freeze.
