While this is true of certain vegetables, especially potatoes which spike blood glucose levels, there are many vegetables that fit the low carb lifestyle. Tomatoes, onions, and green leafy vegetables are good choices and tend to be affordable.

Get Hooked on Fish

Tuna was already mentioned in the previous article, but salmon also contains healthy quantities of omega three fatty acids. Both can be purchased fresh and served in a variety of ways, but both are also available in cans at a far lower price. Canned salmon will take a little more work since you will have to remove bone and cartilage, but you’ll get the high protein, low carb, good fat, food that you need at an affordable price.

Fish and Vegetables Together

Here are some good ways to combine fish and vegetables for a light tasty meal that fits the low carb lifestyle. Make tuna salad according to your favorite recipe (or simply add chopped onion, celery, and mayonnaise) and put it in the fridge to chill. Remove the tops from four large tomatoes and slice each tomato into wedges, but don’t cut all the way through at the bottom. The tomato will open like a flower. Place each tomato on leaf lettuce then scoop tuna salad into the center of each tomato. It makes a very refreshing, light lunch or supper. Serve chilled salmon in a tossed salad made of greens, onions, tomatoes, and black olives. Choose vinegar and oil dressing or mix one up yourself for greater savings.
