More Simple Sweet Treats for Christmas

For those of you after easy, gluten free sweet treats for Christmas, here is a couple more. This first one is good if you have a Christmas cake that turns out too dry. Don’t waste it. Give it a facelift and new lease of life.

Miniature Puddings

Ingredients

1 gluten free fruit cake

Brandy (or orange juice if you don’t want to use brandy)

Melted white chocolate

Glace cherries.

Method

Crumble fruit cake up. Pour over enough brandy or orange juice to make really moist. (I haven’t specified a quantity as this will depend on the size of the cake and also how dry it is.) Mix well.

Shape into small balls with hands. Refrigerate.

When cold, drizzle a small amount of melted white chocolate over each ball. Add half a glace cherry to the top and watch them disappear. Too easy!

Lemon Coconut Balls

Ingredients

8 ounces desiccated or shredded moist coconut

1 can sweetened condensed milk

1 cup pistachio nuts or slivered almonds, crushed

Juice of half a lemon (or more if you like it extra tangy)

A handful of fresh mint leaves chopped

Method

Mix 6 ounces of coconut and the remaining ingredients in a bowl.
Heat a non-stick pan on low heat and add mixture to the pan. Stir over low heat until the mixture starts to dry and rolls easily into a ball.

Remove from the heat. Cool for 5 to 10 minutes until cool enough to handle.

Place the remaining coconut onto a plate. Use damp hands to roll the mixture into balls and then roll in coconut to coat.

Refrigerate and serve cold. The coconut balls can be refrigerated for up to a week.

Cranberries are my new favorite dried fruit and go well in anything from salads to casseroles to sweets. Try these Cranberry Balls. Yum!

Cranberry Balls

Ingredients

2 cups chopped cranberries

4 cups coconut

1 can sweetened condensed milk

Extra coconut for rolling

Method

Combine all ingredients. Shape into balls. Roll in coconut. Store in the fridge.

I doubled the amounts of the original recipe because my guess is you’ll need lots of them to keep up with the demand.
