National Brownies at Brunch Month

Not only is August National Peach Month, National Catfish Month it is also National Brownie at Brunch Month. The month we all have been waiting for! The month that allows us to eat brownies at brunch, how can it get better? However, if plan on partaking in any brownie festivities you need to be armed with low fat alternatives or your month may end with a few extra pounds on your hips. Since that would completely destroy all your hard work I have supplied with you a low fat brownie recipe that tastes great. I will not recommend you eat a brownie daily but you can indulge in one low fat tray of brownies between you and your family for some fun.

Are brownies all bad? Well, they are not all good. Brownies contain sugar and fat that we could all live without. However, chocolate which was once thought of as evil in its intent to your hips is now being seen as having health benefits. It is said to give you energy, reduce heart disease, improve blood flow and lower blood pressure. The benefits are related to dark chocolate as milk chocolate is higher in sugar and fats. Dark chocolate is lower in sugar and higher in flavonols.

Low Fat Brownies

Ingredients

1/2 cup egg substitute

1 (14 ounce) can fat free sweetened condensed milk

1 teaspoon vanilla extract

1 1/3 cups all-purpose flour

1 1/4 cups sugar

3/4 cup baking cocoa

1 teaspoon baking powder

1/2 teaspoon salt

Directions

In a mixing bowl, beat egg substitute for 1 minute or until frothy and slightly thickened. Stir in milk and vanilla. Combine the flour, sugar, cocoa, baking powder and salt; add to the egg mixture and mix well.

Pour into a 13-in. x 9-in. x 2-in. baking pan coated with nonstick cooking spray. Bake at 350 degrees F for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
