National Pancake Week


Get ready breakfast lovers! The fourth week of February is National Pancake Week. The week my son lives for…that is if he knew there was such thing as National Pancake Week. I may not be able to reveal this little bit of knowledge since he is a pancake lover and will insist we eat pancakes all week long. However, that may not be a bad thing since he is the one who makes the pancakes. He makes the best pancakes but pancakes are not usually known for being diet friendly. Most pancakes are just carbs topped with sugar. How can that be anything but unhealthy? Since breakfast is the most important meal of the day we need to start it off better than with white flour and white sugar. Why not a healthy alternative to the old pancake recipe? The secret, according to my son, is the vanilla extract.

Healthy Alternative Cinnamon Pancakes

1. 5 Cup Whole White Flour

1 tsp Baking Soda

2 Tbsp, Agave or Stevia

1 Cup Skim Milk

1/ 2 Cup Eggbeaters

1 Tbsp Vanilla extract

2 Tbsp Cinnamon

Combine flour, baking soda, and sweetener in a bowl. Mix milk, eggs, and vanilla in another bowl. Combine and continually beat the mixture until it is the proper consistency. Stir in cinnamon last. Serving size is 1/3 cup mix. Use cooking spray on skillet when cooking and sweeten fruit and fat free whipped topping.

If you use syrup try to use real maple syrup. It will be nothing but sugar, however, it is a better alternative to fake sugars. If you can find a syrup made with a natural fake sugar like stevia then that would be a great option as well. However, a little bit of fruit and whipped topping will make this a fun pancake to eat without the syrup.
