I really need to cook more. Hailey and I have such different schedules that it makes it hard for us to sit down to meals together during the week. I just don’t have the motivation to fix a full meal when it’s just me so I usually grab a sandwich. Hailey gets home close to 8pm and because I haven’t cooked dinner, she grabs a sandwich as well. This really isn’t good for either one of us.
I’ve been doing a lot of research about how to make dinner work with different schedules. If I were younger I would just fix dinner when Hailey got home from work but in my 40’s eating dinner at 8pm would require way more exercise than I have time for! I just can’t eat that late anymore, of course my eighteen year old still has a great metabolism so late night eating isn’t a problem for her. I need to find better options.
I’ve been reading a lot about once a month cooking and that sounds like something that may work for us. With this type of cooking you spend an entire day cooking and freezing everything in meal sized portions to be thawed and heated up for dinner during the month. I like having something good for dinner but it just seems like too much work when I’m the only one home.
I am going to start slowly, making a few meals on the weekend and freezing them. I already do that with some things, some meals are just too large for us to eat so I’ll separate it and freeze half for later. Chicken enchiladas and meatloaf are good examples of things I already freeze for another meal.
I’m not a huge fan of casseroles and neither is Hailey, she doesn’t like her food to touch, so I’m going to have to search for some recipes that I can make in double and triple amounts and freeze. If you have any suggestions I would love to hear them. I get so tired of having the same things for dinner all the time, mostly cheap, quick and easy. I would love to add some new recipes to my cookbook. You never know when you will find a new favorite dinner, and if I can make it in bulk, even better.
