Old Fashioned Raisin Spice Cake
Pour a cup of Earl Grey, cut a slice and enjoy!

INGREDIENTS:
2 large eggs
1 1/3 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 tsp allspice
1/2 tsp cloves
1/2 cup margarine, softened
1 cup sugar
2 large egg yolks
2/3 cups milk
1 tsp vanilla
3/4 cup raisins
1/4 cup margarine, softened
2 cups sifted icing sugar
1 tbs lemon juice
2 tbs cream or milk

DIRECITONS:
1. Beat egg whites to stiff but moist peaks.
2. Combine flour, baking powder, salt, and spices in a large mixing bowl. Stir well to blend.
3. Add 1/2 cup margarine, sugar, egg yolks, milk and vanilla.
4. Beat with electric mixer on medium speed until smooth, about 1 1/2 minutes. Stir in raisins.
5. Fold in stiff egg whites. Spread batter evenly in greased 9″ baking pan.
6. Bake at 37 for 30-35 minutes. Cool completely.
7. Meanwhile, cream margarine, half of icing sugar, and lemon juice together until light.
8. Gradually add remaining icing sugar and enough cream to make a smooth spreading consistency.
9. Spread over cooled cake.
