One Pot Beef and Vegetables
You just can’t beat a one-dish meal.
INGREDIENTS:
3 lbs bottom round roast
1 1/2 tsp salt
1 tsp ground black pepper
1 tsp onion powder
1 tsp garlic powder
1 can beef broth
6 large potatoes, peeled and quartered
6 large carrots, peeled and cut into 1-inch chunks
DIRECTIONS:
1. Preheat oven to 325.
2. Sprinkle roast with salt, pepper, onion powder and garlic powder and place in casserole dish. Add broth and bake, covered, for 1 hour.
3. Add potatoes and carrots and cook for 1/2 more hour, or until tender. Serve warm.

Cook: 90 minutes
