One Skillet Turkey
A one dish meal – mom’s favorite!
INGREDIENTS:
1/2 cup dry bread crumbs
1 lb turkey, sliced
1 large egg, beaten
1/4 cup olive oil
2 tbs butter
2 medium carrots, sliced
1 medium onion, chopped
2 cups sliced mushrooms
1/2 tsp seasoned salt
1/2 tsp lemon pepper
1/2 lb spinach
1/4 cup freshly grated Parmesan cheese
DIRECTIONS:
1. Place dry bread crumbs in a shallow dish.
2. Dip sliced turkey in beaten egg, then the bread crumbs.
3. In a skillet, heat olive oil and fry the turkey until browned.
4. Remove the turkey and wipe out the skillet. Add butter and saute sliced carrots, and diced onion.
5. Cook and stir for 5 minutes, then add sliced mushrooms, seasoned salt, and lemon pepper.
6. Add spinach and cook until wilted. Return the turkey, sprinkle with grated Parmesan cheese, and heat through.

Cook: 10 minutes
