Oven Beans and Chicken
Adding beans to your diet is not only a healthy choice, but one that helps you feel full when your meal is finished. This satisfying dish weighs in at only 4 Weight Watchers points per serving.
INGREDIENTS:
1 cup low-sodium chicken broth
1 can black beans, rinsed and drained
1 can red kidney beans, rinsed and drained
3/4 cup mild salsa
2 cloves garlic, minced
1 lb skinless, boneless chicken breasts, cut into 2″ pieces.
DIRECTIONS:
1. Preheat the oven to 350ยบ
2. In a 13 X 9 inch baking pan, combine the broth, the beans, salsa and garlic. Add the chicken and baste with some of the liquid.
3. Bake, stirring once, until the chicken is cooked through and the liquid is reduced, about 45 minutes.
