Pantry Challenge: How Have I “Bean?”

It is Sunday today. The pasta with tomato soup went over really well on Friday night. I’m going to put that recipe down as very easy to make and kid-friendly.

For yesterday, there was nothing much to report. We did make breakfast from a pantry item. it was a box of Vermont organic pancake mix. I bought this mix on clearance for 50 percent off of $1.57. I used the mix to make a double batch of pancakes (leftover pancakes make great snacks, especially when you put peanut butter on them). There is still enough mix left in the box for another double batch. That means that our breakfast yesterday cost less than a quarter to feed four people! Compare that to going out to eat. The kids weren’t completely thrilled with the taste, but we can’t have chocolate waffles every day.

For the rest of the day, we chomped away at leftovers. I try to be pretty aware of using up leftovers right away. Why wait until they become science experiments at the back of the fridge.

So today I have to cook again. For breakfast, I made some scrambled eggs with cheese and buttered toast on the side.

Lunch will probably be cheese ravioli from the freezer and fruit cups from the pantry stockpile.

For dinner, I plan on reaching into the pantry for beans and beans. I stocked up on Goya beans when they were on sale a few months ago. I’ll make a vegetarian chili. This is a yummy and warm dish that my husband really loves. I’ll be using up a couple of cans of red kidney beans, pinto beans and part of a jar of salsa. A few spices, and I have an easy meal. As a side dish, I’ll make some very frugal corn bread, another favorite with my family.

For desert, I want to use up some frozen strawberries. I may thaw them to eat plain, mix them into ice cream as is, or maybe use them in a crumble. I’m not too sure yet, as it is only 9:30 here and much too early to think about desert.

Looking into my supplies, it seems that I have a lot of Philadelphia cream cheese. Does anyone have any good recipes or suggestions to use this up?
