It is day two of my personal pantry challenge. Last night, the helper enchiladas went over pretty well. In my pantry challenge, my goal is to use up items in my pantry and freezer for our family meals. To learn more about what I’m doing, see my earlier blog, What is a Pantry Challenge?
Here is what we are using up today.
Breakfast was english muffins thawed last night from the freezer. I toasted them and topped them with peanut butter, and we had some very ripe strawberries on the side. I’m glad of this challenge, because the strawberries might otherwise have been missed. They definitely would have been too ripe to enjoy tomorrow.
For lunch, Andrew took a peanut butter and jelly sandwich and more strawberries (his choice), along with a boxed soy milk from the stockpile. The rest of us will have sandwiches made with deli lunch meat and cheese. The baby will have breastmilk and mushed carrots, but you probably didn’t need to know about that.
For dinner, Molly and I put together a lasagna while Henry napped. Cooking and assembling food can get pretty messy when you have a two-year-old helper, but having Molly as an assistant is a lot of fun. She really gets into the mixing and the pouring and the sprinkling.
In the lasagna, we used a box of no boil noodles, (I love the Barilla brand), shredded mozzarella from the freezer, ricotta cheese from the refrigerator a half jar of Ragu sauce from the refrigerator, a full jar of Ragu sauce from the pantry, eggs, parmesan cheese and about a pound of ground turkey.
I’ll also make a Caesar salad (this will use up my fresh greens) and some ricotta bread (to finish off one container of ricotta cheese). This is a nice tasty bread that has both calcium and protein. My family eats this bread up so quickly that if I wait too long to slice it they will sneak up to the counter and simply start tearing out hunks with their fingers.
