Peach Pie

Peach Pie
It’s not summer yet until you’ve had some peach pie.

INGREDIENTS:
2 count pastry pie rounds
1/2 cup brown sugar
1/2 cup white sugar
1/4 cup cornstarch
3/4 tsp ginger
1/2 tsp cinnamon
1 1/4 tsp vanilla
5 large peaches, peeled and sliced
2 tbs lemon juice

DIRECTIONS:
1. Preheat oven to 400. Put bottom crust in a 9-inch pie pan.
2. In a large skillet combine sugars, cornstarch, ginger, cinnamon and vanilla.
3. Fold in peaches and simmer for 5 minutes or until filling thickens slightly. Remove from heat and stir in lemon juice.
4. Spoon filling into prepared pie pan. Slice top crust into strips.
5. Weave strips on top of pie in a basket weave pattern.
6. Place pie on baking sheet and cover loosely with foil.
7. Bake for 15 minutes, remove foil and bake for 45 more minutes or until crust is brown and filling is bubbly.

Cook: 60 minutes
