Peanut Butter Banana Pie
All the monkeys in your zoo will love this too!
INGREDIENTS:
1/3 cup margarine
1 1/3 cup graham crumbs
1/4 cup granulated sugar
1/4 cup finely chopped peanuts
18 large white marshmallows
1/2 cup milk
1/2 cup smooth peanut butter
2 cups prepared whipped topping or 1 250ml carton whipping cream
3 medium bananas, sliced
1/2 cup chopped peanuts for topping
DIRECTIONS:
1. Melt margarine. Stir in crumbs, sugar and peanuts. Press into bottom and sides of a 9″ pie plate.
2. Bake at 375 for 8 minutes. Cool.
3. Heat marshmallows and milk in a heavy saucepan over medium heat until melted and smooth, stirring constantly.
4. Remove from heat and stir in peanut butter. Cool to room temperature.
5. Fold in whipped topping, or fold in beaten whipping cream into peanut mixture.
6. Arrange 2 sliced bananas on the bottom of the crust filled pie plate. Top with the filling mixture.
7. Chill until set. Garnish with remaining sliced banana (dipped in lemon juice to maintain color) and chopped peanuts.
