Have you been to a picnic or get-together lately? Have you brought dessert? If so, I’ll bet you took a lot of time making it, didn’t you? Here’s a recipe I saw on the Food Network, for kids and grownups alike. It takes literally five minutes to prepare and I promise you, it will be eaten faster than you can cut it into squares.
I made this the other day for a barbecue. The kids didn’t even have the chance to sample it because the grown-ups got to it first. Who can resist peanut butter, chocolate, and marshmallows? Not me.
For this recipe you’ll need:
1/2 stick butter
10 ounces mini marshmallows (you can use the large marshmallows but I think the mini ones melt faster)
3/4 cup peanut butter (don’t go for the natural brands, stick to the commercial brands like Skippy)
6 Cups Rice Crispies Cereal
6 ounces melted Milk Chocolate Chips
To Make this recipe:
You’ve got to be quick when making this recipe.
In a large pot, melt the butter completely. Next, add the marshmallows and cook over medium-low heat until there are no solid marshmallow bits remaining. Stir constantly. Add the peanut butter and stir until it’s melted and mixed completely. Finally, add the cereal all at once. Stir (it’ll be hard) until the marshmallow mixture coats all of the cereal.
Quickly pour into a buttered 13×9-inch baking pan. Wet your fingers then press the treats evenly into the pan.
Place the chocolate chips into a bowl and melt in 30-second intervals in the microwave, stirring after each interval. Or, melt them in a small saucepan.
Pour the chcolate evenly over the treats and allow it to cool and harden before eating.
If you’re serving the treats later or the next day, just cover them with aluminum foil and leave on the counter.
