Peanut Butter Sandwich Cookies
Sells great at the school bake sale!
INGREDIENTS:
1 cup butter, room temperature
1 cup creamy peanut butter
1 cup white sugar
1 cup packed brown sugar
1 tsp vanilla extract
3 large eggs
4 cups all purpose flour
2 tsp baking soda
1/4 tsp salt
1/2 cup creamy peanut butter
3 cups confectioners’ sugar
1 tsp vanilla extract
6 tbs milk
DIRECTIONS:
1. In a mixing bowl, cream butter, 1 cup peanut butter, and sugars (except powdered). Add 1 tsp vanilla.
2. Add eggs one at a time, beating well after each addition.
3. Mix flour, baking soda, and salt in a separate bowl. Add to mixture in mixing bowl.
4. Shape into 1 inch balls and place 2 inches apart on ungreased baking sheets. Flatten with tines of a fork.
5. Bake at 375 for 6 to 8 minutes. Cool on wire racks.
6. In a mixing bowl, combine and mix the remaining ingredients until smooth.
7. Spread on half of the cookies and top each with another cookie.
