Pepperoni Cheese Puffs

Yum—here’s a clever idea. Instead of gobbling down an entire pizza, how about popping a few tasty pizza puffs into your mouth instead? They’re flavorful, cheesy, and delicious. Your whole family will love them.

Serve them as an after school snack, on weekends, or at get-togethers. Or make them and share them with NO ONE…who could blame you?

For this recipe you’ll need:

·1/4 cups water

·1/3 cup shortening

·1-1/2 cups all-purpose flour

·4 eggs

·3/4 cup finely chopped pepperoni (3 oz.)

·3/4 cup finely shredded Pecorino Romano or Parmesan cheese (3 oz.)

·2 tablespoons snipped fresh parsley

·1/8 teaspoon garlic powder

·1/8 teaspoon pepper

To make this recipe:

Preheat oven to 450 degrees F.

1.Grease 2 large baking sheets with butter or shortening, or spray with cooking spray; set aside.

2.In a large saucepan combine the water and shortening. Bring the mixture to a boil. Add the flour all at once, and stir vigorously to reduce/eliminate lumps. Cook, stirring constantly, until mixture forms a ball. Remove from heat.

3.Cool for 10 minutes. Then add the eggs, 1 at a time, beating well with a wooden spoon after each addition. Stir in the pepperoni, cheese, parsley, garlic powder, and pepper.

4.Drop dough by rounded teaspoons 2 inches apart onto prepared baking sheets. Bake in a preheated 450 degree F oven for 15 to 17 minutes or until the puffs are golden. Transfer the puffs to a wire rack. Serve warm.

Makes 48 puffs.

These are delicious served with a side of spaghetti marinara sauce for dipping. To make your own, simply use a can of crushed tomatoes. Empty a Spaghetti Seasoning packet and cook for a bout 10 minutes. Or, to make it even easier…just pop open a jar of your favorite marinara sauce. Voila!
