Pizza Casserole

What could be better than a pizza casserole? It combines two food items I absolutely love – pizza and casseroles. And I almost always find that any recipe that includes the word “casserole” is not only delicious, but also easy to make. When I saw this recipe at AllRecipes.com, I knew it was something I had to make. Hello Sunday dinner!

For this recipe, you will need egg noodles, lean ground beef, one small onion, 2 cloves of garlic, one green bell pepper, pepperoni slices, 16 ounces of pizza sauce, milk, and shredded mozzarella cheese.

To prep for this recipe, you will need to chop your onion as well as your green bell pepper. You will need to peel your garlic and mince both cloves.

Preheat your oven to 350 degrees. Cook 2 cups of noodles as directed on the back of the package. Drain those well when they are done. In a skillet over medium heat, add 1/2 pound of lean ground beef, the small chopped onion, and the 2 minced garlic cloves. Once the ground beef is done, drain the excess fat and discard.

Add the cooked noodles to the skillet. Stir well then add 4 tablespoons of milk, the 16 ounce jar of pizza sauce, and 1 cup of sliced pepperoni. Stir well and let this cook for 2 to 3 minutes before removing from the heat.

Pour the skillet mixture into a 2 quart baking dish. Bake the casserole at 350 degrees for 20 minutes. Remove the baking dish from the oven and top with 1 cup of shredded mozzarella cheese. Return to the oven and let the casserole cook for another 5 to 10 minutes – just long enough to let the cheese melt.

This recipe is great served alone or with toasted French bread or a side salad.
