Pressure Cooker Beef Soup
1 pound of stew beef
1 soup bone
3 cups water
1 cup onion, chopped
3 large tomatoes, peeled and chopped
1/2 green pepper, seeded, and chopped
2 cloves garlic, minced
14 1/2-ounce can of stewed tomatoes
1 cup corn kernels, cooked
1 cup sliced okra, cooked
1/4 cup rice
1/8 teaspoon ground cayenne pepper
Salt and pepper
Place beef, soup bone, water, onion, tomatoes, green pepper, garlic, and stewed tomatoes in pressure cooker. Close cover securely and then place pressure regulator on vent pipe, cooking 20 minutes. Allow pressure drop. Remove soup bone then add remaining ingredients. Close cover securely, placing pressure regulator on vent pipe. Cook until cook pressure and 15 pounds is reached. Remove cooker from heat and let cool, allowing pressure to drop.
