Raisin Bran Muffins
A tasty way to sneak bran into your diet!
INGREDIENTS:
1 cup bran cereal
1 cup flour
1/2 tsp salt
1/2 cup raisins
1 large egg
3/4 cup milk
2 1/2 tsp baking powder
1/4 cup granulated sugar
1/2 cup chopped walnuts
1/4 cup vegetable oil
DIRECTIONS:
1. Mix cereal and milk, and let stand about 5 minutes, until most of milk is absorbed. Preheat oven to 400F.
2. Lightly grease 12 muffin cups. Sift flour, baking powder, salt and sugar into medium-sized bowl. Stir to mix.
3. Add raisins and nuts and toss.
4. Add egg and vegetable oil to bowl with cereal/milk, and beat mixture with a fork.
5. Pour wet ingredients into bowl with dry ingredients and stir just until moistened (batter will be lumpy).
6. Spoon batter into prepared muffin pans. Bake 30 minutes or until browned.
