Raisin Molasses Cookies
Nice, chewy cookie with good flavor.
INGREDIENTS:
3/4 cup shortening
1 cup granulated sugar
1/4 cup molasses
1 large egg
2 cups all purpose flour
2 tsp baking soda
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp ginger
1/4 tsp salt
1 cup raisins
1 tbs granulated sugar for topping
DIRECTIONS:
1. Cream shortening and sugar in a large bowl on medium speed of electric mixer until light and fluffy.
2. Add molasses and egg. Mix well. Combine flour, baking soda, spices, and salt. Add to creamed mixture.
3. Mix well, and then stir in raisins. Cover and chill for 1 hour for easy shaping.
4. Shape dough into 1″ balls. Roll in sugar to coat well. Place on a greased cookie sheet.
5. Bake at 350 for 10-12 minutes or until set. The cookies will flatten and crack after baking.
