Recipes for Valentine’s Day Brunch

This year, Valentine’s Day falls on a Sunday. That’s great news for those who enjoy leisurely weekend brunches. Those who choose to eat out on Valentine’s Day are sure to be treated to some extra sweet offerings. Meanwhile, those who prefer to cook up their own Love Day brunch dishes will be treated to extra time that they wouldn’t have if Valentine’s Day fell on a weekday.

If you plan to surprise your sweetheart with a homemade Valentine’s Day brunch, then consider adding these special dishes to the menu:

BACON AND SPINACH BISCUIT QUICHE

Ingredients:

8-ounce package light cream cheese softened

2 tablespoons milk

4 eggs

1 cup shredded Swiss cheese

1/4 cup onion

1/2 cup mushrooms

1 can Grands Flaky Biscuits

1 pound bacon

1 1/2 cups frozen spinach, thawed

Directions:

Fry bacon until crisp. Drain. Set aside.

Preheat oven to 350 degrees.

Chop onion and mushrooms in food processor, and then set aside.

Rough chop spinach.

Crumble cooled bacon.

In medium size bowl beat cream cheese, milk and eggs until smooth. Stir in Swiss cheese, spinach, onions and mushrooms.

In a greased 9 by 13-inch baking dish add split biscuits to cover bottom. Sprinkle half of bacon over biscuit dough. Pour cream cheese mixture over bacon. Sprinkle remaining bacon on top of cream cheese mixture.

Bake for 35-40 minutes or until cream cheese mixture is set.

Remove from oven and serve warm.

CINNAMON PUFFS

Ingredients:

1/4 cup sugar

1 teaspoon cinnamon

1 (8-ounce) can crescent rolls

8 marshmallows

1/4 cup melted butter

Ingredients for Glaze:

1/2 cup powdered sugar

1/4 teaspoon vanilla

2 tablespoons milk

Directions:

Preheat oven to 350 degrees.

Combine sugar and cinnamon.

Separate crescent roll dough.

Dip marshmallows, one at a time, in melted butter.

Roll marshmallows in cinnamon sugar mixture and roll up in crescent triangle (roll from pointed end first). Squeeze edges together tightly.

Dip bottom of roll in butter and place in muffin pan.

Place muffin pan on cookie sheet (because marshmallows will melt and may ooze out).

Bake for 10 to 15 minutes.

In the meantime, make glaze by combining all of the ingredients in a bowl.

When puffs are done, remove from oven, place on a plate and serve with glaze.
